SCIENTIFIC ACTIVITY
Recent research interests: Thermodynamics and transport properties in ionic solids, glasses and melts (1970-1987); polymerization kinetics of thermoset systems (1980-1987); phase transitions and heat induced transitions of starch and protein foods; use of supercritical fluids in food and related systems (since 1987).
Main experimental techniques: calorimetry and thermal analyses.
Coordinatore of the European project FAIR CT97-3069 "Use of Wheat Water Extractable Arabinoxylans (WEA) to improve Stability of Frozen Doughs and Quality of Bread".
